Cashel Palace debuts Autumn Wine & Spirits Series with a Tasting Menu at Michelin-Star Bishop’s Buttery
Tipperary, Ireland (September 17, 2024): Cashel Palace, a proud Relais & Chateaux member that debuted in County Tipperary in March 2022, continues to elevate its fine and casual dining experiences as the team behind its Michelin-Star Bishop’s Buttery debuts Sadler’s Restaurant in Fethard. Launching this September is their Autumn Wine & Spirit Series. The three-part event series will transport guests through the heritage and craftsmanship of Henschke Vineyard, Deutz Champagne, and Macallan Whisky. Partnering with some of the most prestigious wine and spirits brands locally and afar, each evening affair will be paired with a custom Tasting Menu at the Bishop’s Buttery, inspired by its local producers and vendors.
At the brand-new Sadler's Restaurant, located in the heart of the historic town of Fethard, led by the culinary team behind Cashel Palace's Michelin-starred Bishop's Buttery, guests can expect exquisite but casual dining. Fethard, nestled in County Tipperary, is a town steeped in medieval history and lies at the heart of Ireland's premier horse country. Culinary enthusiasts, history buffs, and equestrian fans can now dine side by side with local jockeys and trainers. The restaurant pays homage to local racing history with motifs of local equine, including horseshoes from Ballydoyle, images adorning the walls from Coolmore Stud, and bridals of champion racehorses hanging. Sadler's aims to become a cornerstone of the local dining scene and is committed to catering to the needs of both locals and tourists, ensuring a comfortable and enjoyable dining experience for all. Highlights from the brunch menu include chorizo baked eggs, french brioche toast, and a Full Tipp Breakfast with food sourced from local purveyors. Lunch highlights include BBQ Irish Haloumi Salad, Sticky Five Spiced Chicken, and the Bookmaker’s Sandwich (sourdough bread, Smithwick’s pickled shallot, Walsh’s sirloin steak and fried egg).
Fethard is the central hub for equestrian enthusiasts and tourists interested in Ireland's rich equine heritage. After fueling up at Sadler's Restaurant, visitors can saddle up and go off-trail riding through Fethard's picturesque backcountry. September 11 | Evening with Australia’s Henschke Vineyard
A representative from one of Australia’s most revered vineyards will share information on the vineyard’s history and heritage as guests indulge in tastings in Cashel Palace’s Drawing Room. Following the reception, guests will be treated to a tasting menu at Bishop’s Buttery paired with wines from Henschke. The price for this package is $283.
October 23 | Evening Celebrating the Elegance of Deutz Champagne
Beginning with a caviar and champagne reception in the Drawing Room and followed by Michelin-starred dining at Bishop’s Buttery paired with a carefully curated selection of Deutz champagnes, the night is sure to be a treat showcasing the sophistication of these remarkable bubbles. The price for this package is $283.
November 12 | Macallan Whiskey Experience
Guests will be welcomed in the Orangery with a Macallan "Patience Serve Workshop" and canapés, setting the stage for a night of whisky exploration. The evening continues in the enchanting Secret Garden, where the fires will be lit, creating a cozy ambiance for an expert-led whisky tasting. The grand finale will be a tasting menu in the Bishop’s Buttery restaurant, paired with innovative Macallan whisky cocktails. Each guest will leave with a Macallan Double Cask 12 YO bottle as a memorable keepsake. The price for this package is $325 per person, including a welcome drink and canapés, whiskey workshop, expert talk, tasting menu with whiskey pairings, and a Macallan gift bottle.
With a deep connection to the Golden Vale and rich pastures surrounding the hotel, Director of Culinary Stephen Hayes provides an exciting culinary experience at Cashel Palace, where food is a celebration – of life, of the land, of the locality.
